Our Story
Deer Processing Built on Hunting Heritage, Clean Work, and Honest Flavor
At Bair’s Deer Processing, we know the harvest means something. Since 1995, our family has helped local hunters turn deer and big game into clean, carefully prepared cuts, sausage, bologna, jerky, hot dogs, and custom venison blends they can feel proud to bring home. Founded by Troy to give hunters a faster, more reliable alternative to generic commercial slaughterhouses, our PA Department of Agriculture State Inspected Shop serves Elizabethtown, Lancaster County, and nearby communities with focused wild game processing, clear communication, and respect for every animal that comes through our doors.
Why We Started Bair’s Deer Processing
Bair’s Deer Processing began because Troy saw a real need in the hunting community. Local hunters were dealing with long turnaround times, unclear handling, and the worry that their carefully harvested deer could get mixed into generic commercial meat processing.
We believed hunters deserved better. From day one, our goal was to create a dedicated wild game processor that understood the season, the work behind the harvest, and the importance of clean, accurate processing. We wanted hunters to know exactly where their deer was going, how it was being handled, and who was doing the work.
Growing the Right Way Since 1995
Since opening in 1995, we have grown into a premier PA Agriculture Department State Inspected Shop while remaining completely debt-free since day one. That matters to us because it reflects the way we run the business: lean, organized, practical, and built to last. Peak rifle season can bring a massive seasonal rush, and that has shaped the way we work. Over the years, we have developed a highly organized family workflow that helps us handle volume without sacrificing cleanliness, quality, or personal service.
We do not cut corners because the season gets busy. We prepare for it.
Focused Strictly on Deer and Big Game
Specialized Wild Game Processing
Unlike general meat markets, we specialize strictly in deer and big game processing. That focus is one of our biggest strengths. Wild game is not an afterthought here. It is what we do. We do not process feathered animals unless they are brought in already as meat, and we keep our attention centered on helping big game hunters get the most from their harvest. Whether your deer is whole, skinned, or quartered, we offer flexible intake options and straightforward guidance. That flexibility helps hunters bring in game the way that works best for their situation.

Custom Recipes Hunters Come Back For
Flavor Built for the Freezer
Good processing is about more than cutting meat. It is about flavor, consistency, and knowing how hunters actually like to fill their freezers. Troy has developed proprietary sausage and bologna recipes that customers return for season after season. We also offer premium custom blending, including ground venison mixed with high-quality beef, pork, or bacon fat. From custom burger blends to jalapeño-cheese hot dogs, specialty bologna, sausage, jerky, and traditional cuts, we help each hunter choose options that match how their family likes to cook and eat.
“Your harvest deserves more than generic processing. It deserves care, clean handling, and flavor worth sharing.”

Proud to Serve Local Hunters and Farming Families
For over 30 years, we have proudly served hunters across Elizabethtown and the surrounding 30-mile area. Our customers include local big game hunters, multi-generational outdoor families, and many Amish farmers who value dependable work and personal accountability. We are motivated by the relationships we have built through hunting heritage, farming traditions, and shared respect for putting food on the table. Some customers have been coming to us for years. Others arrive for the first time because a parent, friend, neighbor, or hunting partner told them, “Take it to Bair’s.” That kind of trust means everything to us.
Giving Back Through the Harvest
We are proud partners with Hunters Sharing the Harvest and Farmers and Hunters Feeding the Hungry. Through these programs, donated venison helps feed local families and supports people in our community. We believe hunting can do more than fill one freezer. It can help feed neighbors, reduce waste, and turn a successful season into something meaningful for others. That is one more reason we care so deeply about clean, professional processing.
